One of our favorite grilled desserts – every bite is crispy, crunchy, creamy and juicy! Make these dessert tostadas your own by switching up the ingredients.
Blueberry Cheesecake Tostadas
Ingredients
- 1/2 cup butter
- ½ cup sugar
- 3 Tbsp. cinnamon
- 2 Tbsp. lemon juice
- 1 (8 oz) package cream cheese, softened
- 2/3 cup sour cream
- 1/3 cup powdered sugar
- 1 tsp. vanilla
- 2 cups fresh blueberries
- Zest of 1 lemon
- Honey 8 -10
- Fajita-size tortillas
Directions
- Clean and oil grill. Preheat to medium high.
- Melt butter in a heat-safe pan on the grill.
- Combine cinnamon and sugar in a small bowl.
- In a separate bowl, lemon juice, cream cheese, sour cream, powdered sugar and vanilla.
- Brush one side of a tortilla with melted butter and sprinkle with cinnamon sugar. Place sugar-side-down on the grill and cook until tortilla bubbles and bottom is crisped and brown. Brush top side or tortilla with butter and flip.
- Grill until just crisp.
- Place tortilla, sugar side up, on plate. Spread with cream cheese mixture, top with blueberries and a pinch of lemon zest, then drizzle with a little honey. Repeat.
Makes 8-10 servings.
