“We call them San Rafael Brownies because that is where we were camping when we first made them,” she says. “ It is super easy, as long as you know how to cook with a Dutch oven. We hope that you love them as much as we do!”At KOA, we believe in the adage “Life’s too short—eat dessert first.” That’s why we had to feature this amazing recipe created by Colorado KOA camper Andrea Bonner.
Ingredients:
- 1 12 ounce package frozen raspberries
- 2 T. butter
- 1 family size brownie mix
- Eggs, oil and water enough for brownie mix
- 12 inch Dutch oven
- 24 charcoal briquettes
Heat Dutch oven over prepared briquettes until warm. Melt butter in oven then add raspberries. Heat berries stirring frequently until bubbly. Pour prepared brownie mix over berries. Place lid on oven with 14 briquettes on top and place oven on top of the other 10 briquettes. Cook without lifting the lid for about 30 minutes and check for doneness. Serve hot with whipped cream. Serves 8.
The Bonners enjoy camping anywhere they can pitch their tent. Andrea say that they recently spent 5 nights in and had a blast. “We have camped several times at the Salt Lake City KOA,” she says, “where the kids can swim after a long day.”
