Apples were a staple food of settlers across North America and still today apple harvest festivals are a tradition that endures in September and October. he Gettysburg / Battlefied KOA Holiday is a perfect base camp to visit Pennsylvania’s National Apple Harvest Festival in October. Ithaca, New York also hosts a long running Apple Harvest Festival not far from the beautiful Watkins Glen / Corning KOA Resort, which offers quiet wooded sites and cabins among the fall foliage. The North Carolina Apple Festival held in early September is about 30 minutes away from your choice of three fantastic campgrounds: Travelers Rest / N Greenville KOA Holiday, Asheville West KOA, and Asheville East KOA. No matter where you camp, this quick apple spice cobbler will give you a taste of the harvest.
Ingredients
- 2 20oz cans apple pie filling*
- 4 tablespoons butter
- 1 cup pecan pieces
- 1 spice cake mix, prepared according to the directions on the package
- Cream Cheese Topping:
- 1 8 oz. package cream cheese, softened
- ¼ cup butter, softened
- ½ cup powdered confectioners sugar
- ½ teaspoon almond extract
Equipment
- 12 inch Dutch oven and 24-26 hot charcoal briquettes or a 9 x 13 baking dish
Directions
- Preheat oven to 350 degrees F or prepare briquettes. Spread the apples evenly in the bottom of the Dutch oven or greased baking dish.
- Add the pecan pieces sprinkling on top of the apples. Dot the apples with pieces of butter before pouring cake batter evenly across the top of the apples.
- If using a Dutch oven, place 8-10 briquettes underneath and 16 briquettes on top. Bake for 40-50 minutes (for either baking method) or until the center of the cake is firm.
- While cobbler is baking, blend together the cream cheese topping ingredients until smooth.
- Remove the cobbler from the heat and serve immediately topped with a dollop of cream cheese topping.
*To prepare with fresh apples, peel, core and slice 3-4 apples. Layer the apples in the bottom of the baking dish. Sprinkle with ½ cup brown sugar and 1 teaspoon cinnamon. Continue to follow recipe above.
