3 ears grilled corn
1 avocado, peeled and cubed
1 large tomato, chopped
½ red or yellow onion, chopped
1-2 jalapenos, minced (to taste)
¼ cup chopped cilantro, optional
juice from ½ lime
salt and pepper
Grill corn, cool. Cut corn from cobs and combine with remaining ingredients. Salt and pepper to taste. Refrigerate. Makes about 3 cups salsa.
