Quick, colorful and delicious, these easy shrimp fajitas are sure to please the hungriest of campers.
Grilled Shrimp Fajitas
Ingredients
- 2 Tbsp. olive oil
- 2 Tbsp. lime juice
- 1 Tbsp. orange juice
- 1 tsp. cumin
- 1 tsp. chili powder
- 2 cloves garlic, minced
- 1 tsp. salt 1 lb. uncooked shrimp, peeled and deveined
- 1 red bell pepper, sliced
- 1 orange or yellow bell pepper, sliced
- 1 medium red onion, sliced
- Additional olive oil, for grilling
- 8 fajita-size flour tortillas
For serving:
- Pico de gallo or salsa
- Shredded cheddar or pepper jack cheese
- Sliced jalapenos
- Sour cream
- Cilantro
- Hot sauce
- Lime wedges
Directions
- Combine olive oil, lime juice, orange juice, cumin, chili powder, garlic and salt in a large zip top bag.
- Add shrimp and shake to coat. Refrigerate for at least 20 minutes.
- Clean and oil grill. Preheat to medium heat. – Thread shrimp on bamboo or metal skewers.
- Add peppers and onions to a grill basket and toss with a little olive oil.
- Grill until crisp tender and a little charred. – Grill shrimp for 2-3 minutes on each side and remove.
- Add tortillas to grill and cook until warm and slightly charred around the edges.
- Pile each tortilla with onion pepper mixture and shrimp. Garnish as desired.
