Heat up the grill and enjoy this take on traditional strawberry shortcake.
Grilled Strawberry Shortcake
Ingredients
- 2 1/3 cups biscuit mix
- ½ cup milk, plus more for brushing
- 2 Tbsp. turbinado sugar (Sugar in the Raw)
- 1 quart (4 cups) strawberries, sliced
- ¼ cup sugar
Whipped Cream
- Chilled 16-ounce mason jar
- 1 cup whipping cream
- 2-3 Tbsp. sugar, to taste ½ tsp.
- Vanilla extract
Directions
- Preheat grill fitted with an oiled cast iron griddle or large cast iron pan to 400 degrees.
- Combine biscuit mix and milk.
- Drop mixture by spoonfuls onto hot griddle, creating 6 biscuits
- Brush with milk and sprinkle with turbinado sugar.
- Close grill and bake until biscuits are cooked through and browned on the bottom, being careful not to burn them.
- While biscuits are baking, slice strawberries and combine with ¼ cup sugar.
- Make whipping cream: combine heavy cream, sugar and vanilla in a chilled mason jar, close tightly and vigorously shake for 2-3 minutes. Tip: hold the lid rather than the sides of the jar so the warmth of your hands doesn’t slow down the process. Another tip: take turns with friends!
- To assemble, cut each biscuit in half and top bottom half with berries and whipped cream. Top with the other biscuit half and a dollop of whipped cream.
