Cacciatore means hunter in Italian and describes a dish prepared with whatever the hunter finds to add to the skillet. As the fall harvest fills farmer’s markets and roadside stands with fresh fruits and produce, KOA campers can “hunt” for seasonal ingredients to make a meal.
Many KOA campgrounds are near farms and orchards making shopping for dinner an adventure.
- The Albany / Corvallis KOA is a short drive away from the orchards and fresh markets of Oregon’s Willamete Valley.
- In Utah, the Brigham City / Perry South KOA is located on the famous Fruit Way of US 89 in the center of acres of orchards.
- Central Florida KOAs such as Okeechobee and the Orlando (Orlando S.E. and Kissimmee) campgrounds aren’t far from popular fruit stands.

Harvest Peach Chicken Cacciatore Recipe
Ingredients:
- 3 tablespoons olive oil
- 4 boneless chicken breasts, halved
- 1/2 teaspoon salt
- 2 cups mild salsa
- 2 teaspoons sugar or honey
- 2-3 firm ripe peaches, peeled and sliced
- 2 tablespoons fresh basil, chopped
- Prepared brown rice
Equipment: Heavy skillet
Directions:
1. Add the olive oil to a heavy skillet and warm over medium-high heat. Add the chicken breast halves to the hot oil. Sprinkle with salt. Cook the chicken for about five minutes turning to brown both sides evenly.
2. Add the salsa and sugar or honey to the skillet. Sauté over medium-low heat for about 8 minutes.
3. Add the sliced peaches and fresh basil and continue to cook for 5-7 more minutes until the peaches are softened. Serve over hot brown rice
Makes 4-6 servings.
