1-2 Tbsp. olive oil
1 yellow onion, chopped
4 cloves garlic, minced
1 lb. chicken breasts, cubed
2 tsp. cumin
½ tsp. oregano
¼ tsp. cayenne
½ tsp. salt
1/2 tsp. pepper
3 cups chicken stock
2 (4oz) cans green chilies
3 cans cannellini or navy beans, drained
Garnishes, if desired:
Sour cream or Greek yogurt
chopped avocados
shredded cheddar or jack cheese
tortilla chips
fresh cilantro
chopped scallions
hot sauce
Heat oil in a sauté pan over medium heat. Add onions, garlic and chicken and cook until browned. Add spices and cook for another minute. Place in a slow cooker and add stock, green chilies and beans. Cook on low for 3-4 hours until chicken is tender. Salt and pepper to taste. Serve with assorted garnishes. Makes 6-8 servings.
