Spicy Gingersnaps
A pinch of cayenne gives these sparkly cookies extra warmth and spice.
Ingredients:
2 cups flour
2 tsp. baking soda
1 tbsp. ground ginger
1 tbsp. ground cinnamon
1 1/2 tsp. ground cloves
1/2 tsp. ground cardamom
1/4 tsp. cayenne pepper
1/4 tsp. freshly grated nutmeg
1/4 tsp. salt
3/4 cup unsalted butter
1 cup dark brown sugar, packed
1 large egg
1/4 cup mild molasses (not blackstrap)
coarse or raw sugar for decoration
Preheat oven to 375 degrees. Grease or line baking sheets. Whisk together flour, soda and spices in a medium bowl. In another bowl beat butter, sugar, egg and molasses until light and fluffy. Stir in dry ingredients. Roll dough into 1-inch balls and then roll in coarse sugar. Bake for 10-12 minutes until cookies crack on top. Makes about 3 dozen.
