This easy s’mores cupcake recipe is a great way to introduce kids to baking with a spooky seasonal twist. Let the kids decorate their s’more cupcakes for a one-of-kind treat.
Spooky S’mores Cupcakes
Ingredients
Graham Cracker Base:
- 1 pkg. graham crackers (about 20)
- ¼ cup butter (1/2 stick)
- ¼ cup granulated sugar
Chocolaty Cupcakes:
- 1 box Devil’s Food Cake Mix, prepared as directed
- ½ cup mini chocolate chips
Marshmallow Cream Cheese Frosting:
- 1 (8-ounce) pkg. cream cheese softened
- ½ cup (1 stick) butter, softened
- 1 tsp. vanilla
- 1 pound powdered sugar
- 1 (13-ounce) container marshmallow fluff
- Food coloring
- Candy eyeballs, moustaches, knives and other spooky décor
Directions
- Preheat oven to 350 degrees. Line a 12-cup cupcake pan with paper liners.
- Place graham crackers in a zip-top bag and crush with a mallet or rolling pin.
- Combine graham cracker crumbs, melted butter and sugar in a small bowl. Set aside.
- Prepare cake mix as directed. Add chocolate chips
- Add a heaping tablespoon of crumbs to each cupcake liner and firmly press to form a crust.
- Divide cake batter evenly between all 12 cupcake sections fill almost to the top.
- Bake as directed. Cool completely before frosting.
- Make frosting: Using an electric mixer, beat cream cheese, butter and vanilla until light and fluffy, about 2 minutes. Gradually add powdered sugar, beating well after each addition.
- Add marshmallow fluff and mix just until combined. Don’t overbeat.
- Divide frosting between four bowls and add a different food coloring to each bowl.
- Carefully spoon into piping bags and pipe decorative shapes onto cupcakes.
- Garnish with candy eyeballs and assorted sprinkles.
