Add a little warmth to cold days with this easy white bean chili slow cooker recipe. Make it at home, at your campsite or premake and heat up over the campfire.
Ingredients
- 1 yellow onion, chopped
- 3 cloves garlic, minced
- 3 (4 oz.) cans green chilies
- 6 cups chicken broth
- 1 – 1 ½ pounds chicken breasts
- 2 tsp. cumin
- 1/2 tsp. Mexican oregano
- ½ tsp. salt
- ½ tsp. pepper
- 3 cans cannellini beans, drained
- 1/2 lime, juiced
- For serving – shredded cheese, corn chips, diced avocado, chopped cilantro and limes slices
Directions
Combine all ingredients except beans in a slow cooker. Cover and cook on high for 4 hours, low for 7-8 hours. Remove chicken breasts and shred. Return to pan and add cannellini beans. Cook for another 15 minutes on high. Add lime juice and adjust salt and pepper, if needed.
Serve with cheese, cilantro, avocado, sliced limes and corn chips.
