Chile Egg Casserole
Ingredients
Makes 8
- 12 eggs
- 1 pt cottage cheese (small curd)
- 1/2 c flour
- 1 tsp baking powder
- 1/2 c butter
- 1 pound(s) Pepper Jack cheese (grated)
- 8 oz diced Ortega Chile (drained)
Preparation
Preheat oven to 350 degrees. Beat eggs until well blended. Combine flour, salt and baking powder and add to beaten eggs. Add cheeses, butter and chile. Mix Well. Pour mixture into Pam or buttered 9X12 Pyrex baking dish. Bake 35 to 40 minutes, until center is set and the top is lightly browned. Cut into squares and serve accompanied by your favorite salsa and sliced avocado.
