Cowboy Turn Spit Game Hens
Ingredients
Makes 12
- 12 Cornish game hens
- 1 bottle Jack Daniel's Horseradish mustard
- 1 bottle Jack Daniel's Old No. 7 BBQ sauce
- 1 c water
- 6 Tbsp Campfire Cafe Garlic Butter TM spice
Preparation
Season the hens with Garlic ButterTM spice and line them up on the Turn Spit. We made as many as we could fit on the Spit; you make what you need for your crew. Hang the spit up about 3/4 of the distance between the crossbar and the fire, over a medium fire with a good bed of coals. Give it 1/4 turn about every 20 minutes, for about 1-1/2 hours. Hens are done when juices run clear. Thin the mustard with a little water in a small bowl. Once hens begin to cook, baste with the mustard and BBQ sauce. Cook until done. Split down the middle, place on platter, and serve with Chicken & Dumplings.
