Fish Packets for Four
Ingredients
- 4 fish fillets (salmon or trout)
- 2 c uncooked minute rice
- 1 14 oz. can of chicken broth
- 1 c matchstick carrots
- 1 tsp Mrs. Dash garlic and herb seasoning
- 1/3 c fresh or dried chives
- 1 lemon
Preparation
You will need heavy duty aluminum foil (4 pieces about 20 inches long) and butter or cooking spray to put on the aluminum foil pieces. Mix the rice and chicken broth in a bowl and let sit for a 5 minutes. Stir in carrots and seasoning. Slice your lemon. Place 1 fish per aluminum foil piece, put a little butter on the inside of fish or on top, sprinkle a little Mrs. Dash seasoning on it and place a couple slices of lemon inside or on top of fish. Spoon rice mixture around fish, sprinkle fish with chives. Fold aluminum over fish so edges meet and seal edges making a tight 1/2 inch fold. Allow some space on sides for expansion and circulation. Grill packets about 5 inches from heat for 14 minutes or until fish flakes easily with fork. Fold back foil carefully, it's hot. Enjoy !
