Hungry Breakfast Casserole

Ingredients

  • 2  pound(s)  breakfast meat
  • 2  small cans of sliced potatoes (or 3 small baked potatoes, sliced)
  • 12  eggs, scrambled
  • 1  can Grands refrigerator biscuits

Preparation

Optional ingredients:

  • 1 onion
  • 1 green pepper
  • 1 cup shredded cheddar cheese
  • 1 hot pepper
  • favorite spices

Light 5 to 8 charcoal briquettes. When hot, use tongs to place coals in a circle. (Start 28 more coals). Set Dutch oven over these 5 coals. Brown meat and any optional ingredients (except cheese) you choose. Add potatoes (drained) and continue to brown. If you have too much grease you can drain some off. Scramble eggs and add favorite spices and Cheddar Cheese (reserving a small hand full). Poor this into the Dutch oven, do not stir. Lay biscuits on top of the egg mixture and sprinkle remaining cheese on top. Place lid on Dutch oven. Lay 11 coals in a circle, place Dutch oven over these coals and add remaining coals to the lid. Turn Dutch oven 1/4 turn in one direction and lid 1/4 turn in opposite direction every 15 minutes. Dish is done when knife inserted in eggs comes out clean (about 50 min to an hour).
