One Pan Breakfast For Two
Ingredients
Makes 2
- 2 baked potatoes, skin left on, cut in bite sized pieces (from night before)
- 4 slice(s) diced bacon (cook first or pre cooked bacon)
- 1/2 diced onion
- 1/2 diced pepper (red, yellow, orange or green)
- 1/2 c grated cheese of your choic
- 4 well beaten eggs
Preparation
In a medium frying pan fry the bacon till almost crisp. (If you are using pre cooked bacon, fry the veggies and potatoes in olive oil first and then add bacon.) Add the peppers, onions and cooked potatoes. Fry till they are tender crisp. Add the eggs and cover. You can either scramble the eggs at this point or let them cook on one side and turn them over like an omelette. If making an omelette, cover the eggs while cooking. When the eggs are cooked, sprinkle with cheese. Cover till the cheese melts.
Serve with toast if you have a toaster or with buttered bread if you do not.
