Quick Blueberry Cream Pie
Satisfies the sweet tooth without packing on those unwanted pounds!
Ingredients
- 1 graham cracker crust
- 2 4 oz. packages sugar-free instant vanilla pudding
- 2 3/4 c 1% milk
- 1 - 2 Tbsp sweetened shredded coconut
- finely grated zest of one small lime
- 1 pt. fresh blueberries
Preparation
Prepare pudding as directed for pie on package. Pour into pie shell. Spread blueberries evenly on top of pudding. Sprinkle coconut and lime zest evenly over blueberries. Chill 3 hours or more.
Variation: Chocolate instant pudding, fresh raspberries, and orange zest may be substituted for a different taste delight. If desired, a chocolate cookie crust may be substituted in either recipe.
