Shrimp Ka-Bobs
Ingredients
- 1 pound(s) large or jumbo shrimp (tails off)
- 1 zucchini, sliced 1/2 inch thick
- 2 summer squash, sliced 1/2 inch thick
- 30 cherry tomatoes
- 1 large package fresh mushrooms, halved
- 2 onions, sliced in half and separated
- 3 green peppers, sliced in 2 inch squares
- Vidalia onion dressing or Zesty Italian
Preparation
On skewers place one each of the ingredients, in any order you like. You can also substitute other veggies that grill well. If using bamboo skewers, soak them first for 30 minutes to prevent them catching on fire. Leave about 2 inches on each end for holding. Brush the skewers with the dressing. You can either place the skewers directly on a grill, or put two 4X4 pieces of wood on either side of the grill for the skewers to rest on. Rotate the skewers as they cook, about every ten minutes depending on how close to the heat source they are.
