Tortilla Soup
Ingredients
Makes 68
- 1 c chopped onion
- 2 fresh jalapeno peppers (chopped)
- 4 cloves garlic, minced
- 1/4 c vegetable oil
- 2 14 oz. cans stewed tomatoes
- 2 10 oz. cans tomatoes and green chilies
- 2 tsp ground cumin
- 2 10 oz. cans beef bouillon
- 2 10 oz. cans chicken broth
- 1/2-1 Tbsp ground red chilies
- 2 Tbsp fresh cilantro
- 2 10 oz. cans tomato soup
- 3 c water
- 12 flour tortillas, cut in 1/2" strips
- 1 8 oz. shredded cheddar cheese
Preparation
Sauté first 3 ingredients in oil in large dutch oven until tender. Add next 9 ingredients. Bring to boil; cover; reduce heat and simmer for 1 hour. To serve, add chips/tortillas and garnish with cheese.
