Tummy Lovin' Hobo Pockets for 4
Ingredients
- 1 pound(s) lean ground beef made into four small loaves
- 4 large carrots cut into chunks
- 1 medium to large sweet onion cut into chunks
- 4 medium potatoes cut in chunks
- other veggies
Preparation
You will need large sections of Heavy Duty aluminum foil doubled, four of these are needed. Put one meat loaf and 1/4 of ingredients on each piece of foil. Any other veggies such as green or waxed beans, red or green bell peppers, celery mushrooms or squash can be added cut in chunks as well if desired. I like to shop local farm stands in the area for my goodies. Salt, pepper and any other spices desired can be sprinkled as you create 4 well sealed pouches. Place pouches at the edge of the coals of your camp fire. After about 20 minutes check one pouch for doneness being careful not to burn yourself on steam. At this point pouches can be vented with one or two holes and moved away a bit from the coals. Cooking time depends on size and fullness of pouches as well as size of hamburger loaves.
A great dessert can be made by roasting fruit such as apples in the same manner and garnishing with cream, whipped cream or sugar if desired. We have also used sticks to roast apples over the fire after dinner.
