Start your day right with a hearty breakfast over the campfire. These Campfire Breakfast Burritos are easy to prepare, full of flavor, and guaranteed to satisfy the whole family.
Ingredients:
4 large flour tortillas
8 eggs
1 cup shredded cheese (cheddar or your favorite variety)
1 bell pepper, diced
1 onion, diced
1/2 lb breakfast sausage or bacon (optional)
Salt and pepper to taste
Salsa (optional)
Directions:
Cook the sausage or bacon over the campfire or on the grill until crispy. Remove and set aside.
In a cast-iron skillet or a camping pan, scramble the eggs over the fire. Add in the bell pepper and onion, cooking until softened.
Lay the flour tortillas flat and add the scrambled eggs, cooked sausage or bacon, and shredded cheese.
Roll up the burrito, folding in the sides. For extra crispy burritos, wrap them in foil and cook them on the grill or over the fire for 5-10 minutes.

Ingredients:
2 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
1/2 cup barbecue sauce (or your favorite sauce)
1 bell pepper, cut into chunks
1 onion, cut into chunks
1 zucchini, sliced
Salt and pepper to taste
Wooden skewers (soaked in water for 30 minutes)
Directions:
Toss the chicken cubes in barbecue sauce and let them marinate for at least 30 minutes.
Thread the marinated chicken, bell peppers, onions, and zucchini onto the skewers.
Preheat your grill and cook the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
Remove the skewers from the grill, season with a little salt and pepper, and serve with a side of grilled corn or your favorite camping sides.

Ingredients:
1 pork shoulder (4-6 lbs)
1/4 cup of your favorite dry rub
1 cup apple cider vinegar
1 cup BBQ sauce
8 hamburger buns
Pickles, for garnish (optional)
Directions:
Rub the pork shoulder with the dry rub, covering it thoroughly. Let it sit in the fridge for at least an hour or overnight for the best flavor.
Preheat your smoker to 225°F. Place the pork on the smoker and cook for 6-8 hours, or until the internal temperature reaches 200°F.
Once done, remove the pork from the smoker and let it rest for 10-15 minutes. Shred the meat with two forks.
Pile the pulled pork onto the hamburger buns, drizzle with BBQ sauce, and garnish with pickles if desired.

Ingredients:
1 lb ground beef or turkey
1 onion, chopped
1 bell pepper, chopped
2 cans (15 oz) kidney beans, drained and rinsed
1 can (15 oz) diced tomatoes
1 can (6 oz) tomato paste
1 packet chili seasoning mix
1 tsp cumin
Salt and pepper to taste
Shredded cheese, sour cream, and crackers for garnish
Directions:
In a large pot over the campfire, cook the ground beef or turkey with the chopped onion and bell pepper until browned.
Add the diced tomatoes, tomato paste, kidney beans, chili seasoning, cumin, salt, and pepper. Stir everything together and bring to a simmer.
Let the chili simmer for 30-45 minutes, stirring occasionally, until thickened.
Ladle the chili into bowls and top with shredded cheese, sour cream, and crackers.

Directions:
Roast marshmallows over the campfire until golden and gooey.
Place a toasted marshmallow and a piece of milk chocolate between two graham crackers.
Press gently to melt the chocolate and enjoy!
This Chicken and Veggie Skillet is perfect for an easy RV meal.
Ingredients:
2 chicken breasts, cubed
1 zucchini, sliced
1 bell pepper, chopped
1 cup cherry tomatoes, halved
1/2 cup feta cheese (optional)
Olive oil for cooking
Salt and pepper to taste
Directions:
Heat a little olive oil in a skillet over medium heat. Add the cubed chicken and cook until browned and cooked through, about 5-7 minutes.
Add the zucchini, bell pepper, and cherry tomatoes to the skillet. Cook for another 5 minutes, or until the veggies are tender.
Season with salt and pepper, and top with feta cheese if desired.
